Do you love trying new recipes and sharing your cooking experiences, meal ideas or culinary tips with others? If so, then register for the next Cookbook Club through the Fraser Valley Regional Library.

Do you love trying new recipes and sharing your cooking experiences, meal ideas or culinary tips with others? If so, then register for the next Cookbook Club through the Fraser Valley Regional Library on Thursday, Nov. 18 from 2 to 3 p.m. This time the theme is Mexican cuisine. Come prepared to share your favourite Mexican recipes, cookbooks, magazines or websites with the group.

Presenters Natalie and Marcia will also share their favs too. Marcia continues to explore a plant-based diet, so she will tempt participants with a vegan burrito bowl, a yummy dish that’s quick, easy and gluten-free. Natalie will share a family favourite Mexican lasagna recipe.

In the meantime, here is a recipe for you to try:

Avocado Cilantro Lime Dressing

Ingredients

1 ripe avocado

1 lime (2 Tbsp lime juice)

1 cup fresh cilantro (stems removed)

1 jalapeno, roughly chopped without the seeds (or with seeds if you prefer heat)

¼ teaspoon cumin

½ teaspoon sea salt

¼ cup water 

Directions

Add everything to a food processor except the water.  Process until everything is thoroughly mixed.  Pour in water and process until smooth.  Add more salt, cumin or lime juice to taste. To thin further, add 1 Tbsp of water at a time until the desired thickness is reached. Store in an airtight container for up to a week in the fridge.
