Tsawwassen Foodie: Shrimp and Mango Endive Bites

Now here's a great appetizer for a summer get-together. Although they look super fancy–and as such could definitely be served at a more formal sit down dinner–they are easy enough to whip up for an impromptu barbeque or potluck.

Now here's a great appetizer for a summer get-together. Although they look super fancy–and as such could definitely be served at a more formal sit down dinner–they are easy enough to whip up for an impromptu barbeque or potluck.

These are also great with a side salad for a light lunch or dinner. They're designed to be quick snacks, just a bite or two and you're through.

Take cooked chopped shrimp meat and mix with diced ripe mango, minced red onion, cilantro, and jalapeno and spoon into endive spears.

I always look for local west coast shrimp meat at Thrifty’s or Superior Fish Market in Ladner

You can't go wrong with this light, low calorie option as a snack or appy.
