Calling all cooking enthusiasts!

Do you love trying new recipes and sharing your cooking experiences, meal ideas or culinary tips with others? If so, then register for Cookbook Book Club and join on Zoom on Thursday, April 29 from 2 to 3 p.m.

Fraser Valley Regional Library staff will dive into a discussion of soups. Participants are asked to come prepared to share your favourite soup recipes, cookbooks, magazines or websites with the group. Presenters Natalie and Marcia will also share their favs too. Natalie prefers hearty soups such as her Italian Wedding Soup while Marcia, who recently started delving into a plant-based diet, will tempt participants with a Creamy Peanut Soup recipe.

Try Marcie’s Creamy Peanut Butter Soup with a dollop of yoghurt or sour cream (dairy or dairy-free) with a spoonful of crunchy dukkah on top!

½ c nuts, such as hazelnuts, almonds, walnuts or pistachios (or make it nut free with a combination of sunflower and pumpkin seeds)

1/3 c hemp seeds or additional nuts listed above

2 tbsp of sesame seeds

3 tsp of coriander seeds or 1 tsp of ground coriander

1 tsp cumin

½ tsp salt

Pepper to taste

Pinch of chili flakes

Toast the nuts then the sesame seeds and hemp seeds.  Toast the coriander seeds if using.  Add all ingredients to a food processor and run just until the mixture looks “crunchy”.

Refrigerate left over dukkah in an airtight container.
