New cookbook gets healthy

Ladner’s Jini Aroon puts a focus on healthy, delicious and easy recipes with her new cookbook — Healthy-licious Eating.

The all-vegetarian cookbook covers smoothies, salads, soups, snacks and more.

Smoothies are one way to get a high amount of fruit and vegetable servings in one go, she says.

“It’s so easy to do five servings,” she says, noting while fruit can be added for sweetness, it’s important to add greens.

All of the recipes included in her new cookbook have no white sugar and no white flour. Recipes also offer gluten-free and dairy-free options.

There are over 100 recipes in Healthy-licious Eating, she says. She spent about a year working on the project.

Oatmeal is among the breakfast dish recipes in the book.

“Good old oatmeal. What’s wrong with that? Just get back to the basics,” she says.

Aroon, who founded the Ladner Community Kitchen, is a longtime cooking instructor who’s taught through Delta Continuing Education for over 20 years.

The book also includes a glossary where Aroon looks at specific ingredients.

Aroon will be at Black Bond Books in Ladner’s Trenant Park Square on Sunday from 1 to 3 p.m. to talk about her new cookbook. She says she’ll have food samples as well.

Her book is available at Black Bond Books and Parsley, Sage and Thyme in Ladner and Albany Books in Tsawwassen.
